
Being a native Cajun, we’re used to being able to get a great po-boy on just about every street corner. Most places only serve your standard po-boys (shrimp, catfish, crawfish or roast beef). But, Pop’s Poboys in downtown Lafayette has taken the po-boy to a whole new level! And the Apocalypse Chow Po-Boy is one such example.
Because I now live in Texas, I’m at least 6 hours away from a good po-boy. So, I am re-creating some of my favorites so I don’t have to drive to get a great one when I’m craving it. The Apocalypse Chow Po-Boy is one that I love. It is layered with homemade pimento cheese, spicy green tomato chow-chow, and buttermilk fried chicken and is served on a fresh New Orleans French Bread.
When you take your first bite into the delicious crusty french bread and taste the combination of chicken, pimento cheese, bacon, and the spicy chow-chow, you are not going to want to share a bite with anyone.
