
Are you looking for a quick and easy side dish that goes great with chicken, beef, pork, or fish? If so, then these Bacon & Pancetta Potatoes are a great option for you. This recipe calls for diced russet potatoes, but if you’re in a hurry you can also use pre-cut cubed potatoes. My favorite brand is Simply Potatoes diced potatoes. You can buy them with onions or without. And you can find them in the refrigerated section (usually in the dairy section) of your local grocery store.
To make Bacon & Pancetta Potatoes, simply cut up the bacon and pancetta and cook until it’s crispy. If you would prefer to not have to cut the pancetta into small pieces, you can also find a package of diced pancetta like this at the grocery store and it’ll save you a ton of time. Next, add the potatoes, garlic, and other seasonings until it all comes together. I personally prefer my potatoes to be on the crispier side, so I usually let them cook a little longer, until they are golden brown.
This dish has so much flavor, I guarantee your family will want this as part of their regular rotation of side dishes. And if you share the dish with friends, they will definitely want the recipe. The savory flavor of the potatoes mixed with garlic, thyme, bacon and pancetta is amazing.
