These Bite-Sized Crawfish Pies remind me of the Hank Williams song “Jambalaya on the Bayou”. My favorite part of that song…
Jambalaya and a crawfish pie and filé gumbo
For tonight I’m a gonna see my ma cher ami-o
Pick guitar, fill fruit jar and be gay-o
Son of a gun, we’ll have big fun on the Bayou
When I lived in Louisiana, almost any wedding or bridal shower that I attended were serving these delicious Bite-Sized Crawfish Pies. They’re such great finger foods for a party and are easy to make. You essentially make a traditional crawfish étouffée and spoon small amounts of the étouffée into mini pastry or pie shells and bake. The savoriness of the crawfish étouffée and the buttery flakiness of the mini pie crust will leave your tastebuds satisfied. It will be impossible to only eat one!
