Boudin is a staple of Louisiana cuisine and the traditional recipe is a mixture of pork and rice with various vegetables and spices in a sausage casing. With Boudin Quiche, it’s basically a traditional quiche recipe but you remove the casing from the boudin and add the insides to a pie crust filled with eggs and bacon and bake until golden brown.
Boudin can also be made with shrimp, crawfish, duck, rabbit, venison and even alligator. And believe it or not, they now make boudin using cauliflower rice instead of regular rice in you are watching your carbs.
