
There is a restaurant in my hometown of Lafayette, LA called Viva la Waffle that creates the most amazing and creative “waffle” sandwiches. They started several years ago as a food truck and have since transitioned to a brick-and-mortar location. The Boudreaux Waffle is one of their specialties – a homemade waffle filled with crispy buttermilk catfish and a homemade pickled okra tartar sauce. I’ve tried to recreate the Boudreaux Waffle and I believe what you will find below is pretty close to how they make it. It’s a great and unique way to enjoy a fish sandwich! If you like a little spice, add a few dabs of your favorite hot sauce if you want to take this dish to the next level.
