
Pop’s Po-Boys opened in April 2015 and is located in beautiful downtown Lafayette. Chef Collin Cormier and team bring eclectic flair to Louisiana’s favorite sandwich. While they do offer traditional Louisiana po-boys, their weekly specials always offer a unique twist on po-boys and is what keeps me coming back anytime I’m in Lafayette.
As with most po-boy places in town, the bread is Langlanais bread, so you know it will resemble quite a lot of po-boys around town when it comes to the bread. But it’s the fillings that are going to separate the strong from the weak. And Pop’s is one of the stronger contenders in town.
One of my favorite po-boys is the Cardiac Cajun, which comes with fried shrimp tossed in cane-pepper jelly topped with crawfish boiled sausage and pepper jack cheese. Check out their Facebook page to find out what their weekly special po-boy is and be sure to check them out if you’re in the area.
