
My sister-in-law lived in Italy for several years before meeting and ultimately marrying my brother. Her boyfriend at the time and his family were Italian and somehow, she managed to learn his grandmother’s secret recipe for the Ultimate Ragù Bolognese. She has made her recipe for me a few times and it is absolutely amazing, but I believe my recipe gives hers a run for her money. She says that the traditional recipe for Ragù Bolognese includes green peas. I’m not a green pea fan, so I don’t include them. And probably not authentic, but still delicious, I add hot Italian sausage to my recipe because I love any dish with an extra kick of spice and flavor.
Ultimate Ragù Bolognese consists of very slow cooked beef and pork in a tomato mixture with pancetta. It’s amazing how the texture and complexity of this dish changes the longer it cooks.
